What counts as low-carb? Build a day and see where it lands

There is no single definition of low-carb. Health services usually say under about 130 g of carbohydrate a day is low-carb and roughly 20-50 g is the very low-carb "keto" range, while European guidance suggests 45-60% of your energy from carbs.
